On March 25, Cai Nan shared a captivating video titled “I want to make the fried chicken transparent, but the result is strange, ”and it certainly lives up to its name. Throughout the video, the chef demonstrates the fascinating process of creating see-through versions of chicken meat, bones, and the signature crunch that defines fried chicken.

The transformation begins with the bone. By blending bone marrow, collagen, and cold gel, Cai Nan crafts a mixture that he pours into chicken bone-shaped molds, allowing them to set into solid forms. Next, he turns his attention to the chicken meat itself.

Employing an advanced technique reminiscent of science fiction, he processes the chicken into a liquid form, reminiscent of a primordial soup that captures the essence of chicken wings without any physical structure. This unique approach is engineered to preserve the flavor while eliminating the traditional form.

Once the chicken liquid is extracted, the chef utilizes a molecular gastronomy technique known as spherification. This method allows him to reassemble the muscle fibers and retain both the flavor and texture of the chicken in a visually striking translucent manner. Following this, the glass-like meat and bone are placed back into molds until fully set, closely resembling traditional fried chicken wings.
