Taco Bell has partnered with the renowned Portland-based ice cream artisan, Salt & Straw, to introduce an exciting new dessert option named the “Tacolate, ” which will be available to customers all over the United States beginning October 3.
Crafted as a bold twist on the beloved Choco Taco, the Tacolate features a hand-pressed waffle cone shell. Inside, patrons will discover a rich layer of cinnamon ancho chili ice cream, all elegantly dipped in a luscious chocolate coating.
To elevate the experience, this unique dessert comes with two Taco Bell-inspired sauce packets. Rather than pairing with traditional burritos, these special sauces are mango jalapeño and wildberry cinnamon, both specially created to enhance the flavors of the ice cream specifically for this dessert.
The Journey to the Tacolate
The concept for the Tacolate has been a work in progress since 2016, when Salt & Straw first experimented with a soft serve taco at its Wiz Bang Bar, which quickly became a cult favorite. A limited-time revival in 2022 sold out within moments, capturing the interest of Taco Bell CEO Sean Tresvant, who recognized its potential.
After years of careful development and numerous test batches, the Tacolate is finally ready for its debut. As Salt & Straw enthusiastically stated on Instagram, “It’s going to be the biggest engineering marvel in ice cream history.”
Starting on October 3, enthusiasts can find the Tacolate at all Salt & Straw locations across the country, with the option for online orders available for nationwide delivery. In anticipation, interested customers can join the waitlist to secure their Tacolate upon its release.
The introduction of the Tacolate is part of a broader trend in innovative ice cream collaborations in 2025. Recently, Carnival Cruise Line teamed up with Van Leeuwen to offer a unique sunscreen-flavored scoop, while Frida and OddFellows have created a breast milk-flavored ice cream, and KFC has reimagined its gravy as “Gravy Gelato.”
